When I make a turkey or any roasted or smoked poultry I always brine it. When you do this it will give you a moist and flavorful bird. below is a basic brine that I like to use.
1 cup plain salt
1 to 1/2 cups light brown sugar
2 tablespoons poultry seasoning
2 bay leaves
1 large bottle apple juice
2 gallons water
Dissolve all ingrediants in clean container large enough for the turkey or chickens.
Submerse the bird in the brine and cover with ice.
Put something on top of bird to keep it submerged.
Cover and keep cold for approx. 24 hrs.
Replenish ice as needed.
Remove from brine after 24hrs, rinse and cook it the way you like.
I like to use a 5gallon insulated water cooler for this . It saves on ice and room in the fridge.
